Worm composting is an amazing way to create new rich planting media. You'll be able to use most kitchen scraps in a worm composting unit, and keep getting new soil / compost each week to use in your garden. Initially it takes a few months to start getting finished compost.
A worm composting unit can be used in the house or outside, and needs to be kept moist for the worms. New compost created by the unit can be placed on top of the soil, or mixed in with soil.
A good unit can cost $50-$200, but can also be made at home with a plastic bin or pots.
